Chicken Pepper Roast

Chicken pepper roast

 

Chicken pepper roast is easy to make dry dish. Adjust the spice to your taste.

Ingredients         

Chicken : 1kg

Onion sliced : 4

Green chillies : 3-4

 Ginger : 2” pc

Garlic :1 pod

Kashmiri chilli powder : ¾ tsp

Coriander powder : 1tbsp

Turmeric powder :1tsp

Garam masala :1tsp

Pepper powder : 2tbsp

Fennel seeds :1/2 tsp

Coconut oil :1tbsp

Curry leaves

Salt : to taste

 

Instructions

1.Cut the chicken in to small pieces. Wash it. Marinate the pieces in lemon juice or vinegar

  1. Heat the pan, add coconut oil. When oil become hot add fennel seeds, sliced onions, ginger garlic crushed. Let it sauté on medium heat until it turns brown colour.
  2. Add Kashmiri chilli powder, coriander powder, turmeric powder, garam masala and mix well for 2-3 minutes.

4.Add chicken pieces, 1tbsp black pepper powder, salt and mix well. Cover it and cook. If there is water, allow it to evaporate in medium flame.

  1. Open the lid and add 1tbsp crushed black pepper, mix it, Dry roast the chicken for another 5-10 mins, add curry leaves, slit green chillies.

After it turns dark brown turn off the stove.

Serve hot with rice or roti
